Orange Brownies

Ever have one of those weeks where you are more productive than usual, but you don’t make a dent in any of your day-to-day things? I’ve been having one of  those kind of weeks! I am totally that woman who the cashiers start to recognize at the grocery store, since I have been there every day! Of course I pick the week to stalk the grocery store after they stop selling girl scout cookies!!

Anyways…. these are so easy and so fast, and WAY too GOOD!! I take it back nothing is too good!!

You need:

  • 2 c granulated sugar
  • 1½ c all-purpose flour
  • 1 tsp salt
  • 1 c butter, room temperature  (I used salted)
  • 4 large eggs
  • 2 tsp orange zest, divided
  • 1 c confectioners’ sugar
  • 2-4 tbsp orange juice

Preheat oven to 350°. Spray a 13×9 inch baking pan with a non stick baking spray (I use Bakers Joy).

In a large bowl combine sugar, flour, and salt. Add butter, eggs, and orange zest. Beat on medium speed with an electric mixer until well blended.

Spread batter into the baking dish, bake for 30 minutes or until golden brown and set in the middle.

Remove from oven and transfer to a wire rack, pierce the brownies with fork several times. (the glaze is going to soak into the brownies and make them super moist)

Combine confectioners’ sugar, orange juice and zest. Whisk together in a bowl and pour over the brownies.

Let them completely cool.

Cut and ENJOY ♥

Yields about 2 dozen brownies!!
